You might imagine an oblong, deep dark purple vegetable with
a jaunty green cap attached to it when you hear ‘eggplant.’
This is probably the most common form of eggplant found in the U.S.,
but the eggplant world is much larger, and often smaller, fatter, or skinnier.
Others are sweeter, or
more sour, than others.
You’ll find greener
and white varieties, too.
There are forms with a lot of
stripes, while others are entirely solid in colour.
